Easy Greek Salad

This Easy Greek Salad is the perfect meal on a hot summer day! Ready in under 5 minutes and less than 50 calories, this salad makes the perfect side dish for you or a crowd. Easily add your favorite protein for a delicious and light meal!

Ingredients

Servings
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes
  • 1 cup red onion thinly sliced, or pickled red onion
  • 1 cucumber quartered, medium
  • 1 bell pepper diced, medium
  • 1/4 cup kalamata olives halved
  • 1/2 cup feta cheese fat free, 56g

Instructions

  1. Add all the ingredients to a bowl and toss to combine.
  2. Add Light Greek Dressing (or your favorite salad dressing) when ready to serve.

Notes

  • If serving immediately for a crowd, toss with salad dressing. If planning to eat the salad the next few days or to make it last longer, store dressing separately and add when ready to eat.
  • I suggest my Light Greek Salad dressing but any dressing of your choice will work!
