Easy Ground Beef and Broccoli
Description
Easy Ground Beef and Broccoli features ground beef cooked until browned and drained of excess fat, providing a lean base for the dish. Fresh or frozen broccoli florets are simmered in a well-rounded sauce made from low-sodium soy sauce, ground or fresh ginger, fresh minced garlic, red wine vinegar, sesame oil, garlic chili sauce, and optional Sriracha for heat. The ingredients create a sauce that coats both the beef and broccoli, giving a savory and slightly spicy profile. The dish is served over cooked rice, absorbing the flavorful sauce. Toasted sesame seeds garnish the top, adding texture and a nutty note.
The cooking process involves simmering broccoli until tender and letting the sauce meld with the beef and vegetables, resulting in a balanced combination of tender meat and crisp broccoli. Doubling the sauce ingredients is recommended if you want extra sauce to accompany rice. This dish's simplicity and adaptability make it easy to enjoy on its own or alongside noodles or other grains.
The recipe encourages draining the fat after browning the beef for a lighter result. Simmering the dish allows the flavors to combine and the broccoli to become tender yet retain some bite. The optional chili sauces provide heat that can be adjusted to taste, making this suitable for varying spice preferences.
Ingredients
- 1 cup rice
- 1/4 cup soy sauce low sodium
- 1 teaspoon ground ginger or 1 tablespoon fresh minced ginger
- 4 cloves garlic minced, fresh
- 2 teaspoons red wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon Sriracha sauce optional
- 1 teaspoon garlic chili sauce
- 1 tablespoon olive oil
- 1 lb ground beef
- 12 oz broccoli or frozen, fresh florets
- 1 tablespoon sesame seeds
Instructions
- Bring two cups of water to a boil. Add rice and then lower to a simmer and cover. Let cook for 15 - 20 minutes or according to package instructions.
- In a small bowl, add soy sauce, ground ginger, garlic, red wine vinegar, sesame oil, sriracha, and garlic chili sauce and mix well.
- In a large skillet, heat olive oil over medium high heat and add ground beef. Cook for 3-5 minutes, crumbling as you cook. Then drain and discard the excess fat.
- Add broccoli and then soy sauce mixture and then let simmer for about 5-7 minutes until broccoli is tender ( cover and let simmeer a little longer if using frozen broccoli).
- Sprinkle with sesame seeds and serve over rice.
Notes
- Doubling the sauce ingredients provides more sauce for serving over rice or noodles.
- Always drain excess fat from the cooked ground beef for a less greasy dish.
- Broccoli can be fresh or frozen; simmer longer if frozen to ensure tenderness.
- Adjust the amount of Sriracha to control spice level.
