Easy Hollandaise Sauce Recipe

This Hollandaise Sauce is a creamy, velvety emulsion made by whisking egg yolks with lemon juice and Dijon mustard, then slowly incorporating melted butter. It offers a rich, tangy flavor with a hint of heat from cayenne pepper, ideal for topping vegetables, eggs, or fish.

Description

Prepared by gently heating egg yolks combined with water, lemon juice, and Dijon mustard, the sauce thickens as butter is added slowly while whisking continuously over medium-low heat. This careful method prevents the sauce from curdling and produces a smooth consistency that coats the back of a spoon.

The sauce is seasoned simply with salt and a small amount of cayenne pepper, which can be adjusted to taste. It is best served immediately while warm but can be covered to retain heat for a short time. If the sauce becomes too thick, a teaspoon of warm water can be whisked in to loosen it.

  • 2 egg large yolks
  • 2 Tbsp water lukewarm
  • 2 tsp lemon juice fresh
  • 1/2 tsp Dijon mustard
  • 1/2 cup butter 1/2 cup =8 Tbsp, unsalted
  • 1/4 tsp salt or more to taste, fine sea salt
  • 1/8 tsp cayenne pepper or more to taste

Instructions

  1. Separate the egg yolks from the egg whites. Store the egg whites in an airtight container in the fridge for another recipe.
  2. Add the egg yolks to a small non-reactive saucepan with water, lemon juice, and dijon, and whisk until well-combined.
  3. Cut the butter into small pieces and add them to the egg mixture.
  4. Place the pot over medium-low heat, whisking the mixture constantly. As the butter melts, it will get a little frothy. Continue whisking constantly for about 3 minutes or until the mixture starts to thicken then immediately remove from heat. It should be thick enough to coat the back of a spoon.
  5. Season with salt and cayenne pepper, adding more seasoning to taste. Serve right away or cover to keep warm. If the sauce gets too thick, whisk in a teaspoon of warm water to loosen it up.
