Easy Homemade Apple Spice Cake Recipe

An easy and delicious Apple Spice Cake recipe! Fluffy and moist cake, full of warm spices and tender chunks of apples. Lightened-up with applesauce for a sweet fall treat to share with loved ones.

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons apple spice mix
  • 1 cup vegetable oil
  • 3/4 cup granulated sugar white
  • ½ cup light brown sugar lightly packed
  • 1 cup applesauce unsweetened
  • 4 egg room temperature
  • 1 teaspoon vanilla extract
  • 3 tablespoons orange juice
  • 1 teaspoon orange zest
  • 3 cups apple peeled & chopped (about 2-3 large apples or 1 pound) into 1/4 - ½ inch cubes

Brown Sugar Buttercream Frosting

  • ½ cup butter softened, unsalted
  • 1/2 cup light brown sugar lightly packed
  • 2-1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream
  • ¼ cup walnuts toasted (optional, chopped
  • ¼ cup Toffee bits such as Heath Bits O’Brickle (optional)

Instructions

Apple Spice Cake

  1. Preheat oven to 350° F.
  2. Grease and line a 9 x 13” baking pan with parchment paper.
  3. In a large mixing bowl whisk together flour, baking powder, baking soda, salt, and apple spice.
  4. In a separate large mixing bowl combine vegetable oil, granulated sugar, brown sugar, unsweetened applesauce, eggs, orange juice, orange zest, and vanilla extract,
  5. Add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold the prepared chopped apples into the batter and then pour the mixture into the prepared baking pan.
  7. Bake for 30-35 minutes, making sure the top of the cake doesn’t get too brown. Cover with aluminum foil after about 20 minutes if you notice the top is too dark.
  8. Remove the baking pan from the oven and place it on a wire rack to cool while you make the frosting.

Brown Sugar Buttercream Frosting

  1. To make the frosting, add butter to the bowl of a stand mixer fitted with the beater attachment and beat butter until light and fluffy about three minutes.
  2. Add the brown sugar and continue beating until well mixed.
  3. Add the powdered sugar, vanilla extract, a pinch of salt and mix until well combined.
  4. Add heavy cream (a tablespoon at a time) to reach desired consistency.
  5. Spread onto cooled cake making sure to get into all the corners
  6. Top with toasted chopped walnuts and toffee bits if adding.
  7. Cut into squares and serve

Notes

  • Cut your apples into ¼-inch - ½-inch cubes (do not grate them as they will hold too much water).
  • Scrape down the sides of your bowl with a soft spatula from time to time while making the frosting so that you end up with a nice smooth texture
  • Cutting the apples into smaller chunks will make for easier and neater cutting of cake slices
  • You can use freshly squeezed orange juice or concentrate, either is fine.
  • Any baking apple such as Granny Smith or Honeycrisp is a good choice of apple.
  • To lower the sugar and carbs replace the sugars with your favorite sugar alternative like allulose and golden monk fruit.
