Easy Homemade Italian Fish Soup
Description
This Italian Fish Soup combines various seafood such as shrimp, cod, calamari, and mussels cooked together in olive oil with garlic and optional hot pepper flakes. After lightly cooking the seafood, dry white wine is added followed by tomato puree, water, oregano, basil, and fresh parsley. The mixture simmers until the flavors meld and the broth thickens to a stew-like consistency.
The soup showcases fresh herb aromas with a balanced acidity from the tomato component and weight from the diverse seafood. It presents a hearty texture with chunks of fish and shellfish throughout the fragrant broth.
Traditionally served with thick slices of grilled or plain Italian bread, the bread is perfect for soaking up the rich tomato broth. Leftover soup will keep for two days refrigerated or can be frozen for several months, making it convenient for planning meals ahead.
Ingredients
- 1 pound assorted fish examples: shrimp, prawns, cod, haddock, calamari, mussels, clams, cut up
- 2 tablespoons olive oil
- 2-3 cloves garlic chopped
- 1-2 dashes hot pepper flakes optional
- ¼ cup white wine dry
- ¾ cup tomato puree aka passata
- 1¼ -1½ cups water depending on how thick you want it, more soup or stew
- salt I added a pinch, to taste
- 1 teaspoon oregano
- 1 teaspoon basil
- ¼ cup Italian parsley chopped, fresh
- 4 lices Italian bread grilled or plain, thick crust
*Depending how salty your fish is it's best to add the salt at the end of the cooking time.
Instructions
- In a large pot add olive oil, garlic and hot pepper flakes, heat on medium for one minute and then flatten with a fork.
- Add cut up assorted fish, cook one minute. Add white wine and cook on medium-high for approximately 3 minutes. Add tomato puree and water, oregano, basil and fresh parsley, stir to combine.
- Bring to a boil, then reduce heat to a low simmer for approximately 30 minutes until thickened (after about 20 minutes taste for salt and add if needed). Serve over grilled crusty Italian bread or with crusty Italian bread on the side. Enjoy!

- Use a variety of fresh or frozen seafood, selecting your favorites like clams or monkfish.
- Store leftovers in an airtight container for up to 2 days refrigerated or freeze for 4-6 months.
