Easy Horchata is a refreshing beverage made by blending long-grain white rice with water and cinnamon sticks, then chilling the mixture to infuse the flavors. After straining, dairy or dairy-free milk, vanilla extract, and maple syrup are added to create a creamy, sweet, and lightly spiced drink served over ice.

Description

This Easy Horchata recipe uses rinsed long-grain white rice blended with water and cinnamon sticks to break down the grains and extract cinnamon flavor. The blended mixture is refrigerated for 8 to 12 hours to fully infuse and mellow the flavors. After chilling, it is strained through a nut-milk bag or fine mesh to remove solids, leaving a smooth liquid.

Dairy or dairy-free milk is stirred in along with vanilla extract and maple syrup, which provide creaminess and sweetness. The beverage is served over ice and optionally garnished with ground cinnamon or a cinnamon stick for extra aroma.

Substitutions include using ground cinnamon if sticks are unavailable, at a ratio of half a teaspoon per stick. The drink can be prepared ahead of time and kept chilled for a refreshing, soothing treat.

  • 1 cup long-grain white rice rinsed

  • 2 cinnamon stick
  • 2 cups milk dairy or dairy-free milk
  • cup maple syrup or other sweetener
  • 1 teaspoon vanilla extract

Instructions

  1. Add the rice, water, and cinnamon sticks to a high-powered blender. Blend for about 40 to 60 seconds, until the rice and cinnamon sticks are grounded.
  2. Pour the mixture into a large container. Then cover and let it chill in the fridge for 8 to 12 hours, or preferably overnight.
  3. Strain the mixture through a nut-milk bag into a pitcher.
  4. Stir in the milk, vanilla, and maple syrup. Taste test and add more sweetener if needed.
  5. Serve over ice and and garnish with freshly ground cinnamon or cinnamon sticks.
