Easy Instant Pot Apple Butter (low sugar)

This velvety and sweet Instant Pot Apple Butter recipe is perfect with all the fall flavors and warm spices, like cinnamon, nutmeg, cloves, and allspice - it's low sugar too. Using an instant pot, your cooking process is finished in a fraction of the time, making it a great gift!

Ingredients
- 5-6 1/2 pounds apples peeled (or not), cored and sliced into 8ths. Use your favorite apples, I used Fuji and Honeycrisp
- 3/4 cup brown sugar I used half dark and half light
- 1 teaspoon Kosher salt and pepper to taste helps balance the flavors
- 1 tablespoon cinnamon
- ½ teaspoon nutmeg try fresh grated
- ½ teaspoon allspice
- ¼ teaspoon cloves
- 1/4 cup water filtered is best
- 1 tablespoon vanilla extract regular or bourbon vanilla
Instructions
- Core, peel and slice apples into 8ths. Be a lazy peeler or don’t peel at all, I like the texture and nutrients with some of the skins, which is why I use organic apples.
- Place in a 6 or 8-quart instant pot or pressure cooker. In a medium bowl combine sugar(s), cinnamon, nutmeg, allspice, cloves, and salt. Mix well and pour over apples. Add water and mix apples well to coat. Add just to 1 inch from top of pressure cooker.
- Turn the Instant Pot to Manual or Pressure Cook on high pressure for 90 minutes, sealing the venting valve. Allow the steam to naturally release for 10-15 minutes, then perform a quick release from pot, being careful while venting.
- Using an immersion blender, puree apple butter until smooth. *If you don’t have an immersion blender, place apples in a blender in batches. **Be sure to keep the vent open on the blender lid and place a paper towel or tea towel over the top as the contents while blending will create pressure and could pop the lid. Blend in batches until smooth.
- Return to the instant pot and hit the Slow Cook button twice to change it to HIGH, with the lid propped open (do not seal) cook on high for 2-3 hours, stirring occasionally. If thicker apple butter is desired, press the Saute (press it twice to hit low) and saute on low or medium for 15-30 minutes, stirring often.
- Remove from heat, stir in the vanilla extract and spoon into clean glass or plastic containers. This is not a canning recipe. Refrigerate cooled apple butter for up to 2 weeks, or freeze up to 3 months.
- Instant Pot Apple butter will thicken as it cools and is refrigerated.

- The best way is simply to let is simmer, simmer, simmer away -- preferably with the lid off over low heat to allow the moisture to escape. Simmering for a long time, reduces the mixture, be sure to stir occasionally scraping the bottom of the pot.
