Description
Easy Italian Tomato bruschetta features toasted bread toasted until golden and optionally rubbed with garlic. The topping is a fresh mix of medium to large ripe tomatoes with seeds and excess pulp removed, finely chopped red onion, celery for crunch, and flavorings like oregano, basil, and parsley—all bound by olive oil. Salt season enhances the natural brightness.
The toasted bread provides a crunchy contrast to the juicy, fragrant tomato mixture, with a hint of garlic adding depth. The herbs contribute a fresh, aromatic finish. The topping can be enhanced with a bit of balsamic vinegar for acidity if desired.
This bruschetta is best served immediately after assembling to maintain the crispness of the bread. It works well as an appetizer or alongside a meal as a refreshing bite, showcasing simple Italian flavors and textures.
Ingredients
BRUSCHETTA RECIPE
- 6 lices bread
- 1-2 cloves garlic
- 2-3 pinches salt
*Best is day old homemade bread or Italian crusty bread, a bread with a compact crumb.
TOMATO TOPPING
- 4 tomato chopped / I remove the seeds and extra pulp, medium to large, firm, ripe
- ½ red onion (chopped)
- 1 celery chopped, stalk
- ½ teaspoon salt
- 1½ teaspoons oregano
- 4-5 leaves basil fresh, chopped
- 4-5 leaves parsley fresh, chopped
- ¼ cup olive oil
Instructions
BRUSCHETTA RECIPE
- Heat pan grill or BBQ to hot and keep temperature relatively high, place sliced bread and turn until toasted golden, remove and if desired rub with a clove of garlic, sprinkle with a little salt then top with the tomato topping, serve immediately.
TOMATO TOPPING
- In a medium bowl mix together the chopped tomatoes, red onion, celery, salt, oregano fresh basil and olive oil, serve over freshly toasted bread, if you like, a little drizzle of Balsamic vinegar is a tasty addition. Enjoy!
