Description
Easy Keto Chili uses ground sausage and diced stew meat cooked until browned before adding sautéed onions, garlic, carrots, celery, and red bell pepper. The resulting chili has tender meat chunks and softened vegetables enveloped in a spicy, fragrant broth. It can be made in batches using a dutch oven or a pressure cooker Instant Pot, offering flexibility in cooking time and method. This meal provides warming comfort with moderate heat and meaty texture, appropriate for ketogenic meal plans due to its focus on protein and fat rather than carbohydrates.
Ingredients
- 1 pound ground sausage
- 2 pounds stew meat see note, cut into 1/2 inch pieces
- 1 yellow onion choppeed
- 5 cloves garlic minced
- 1 tsp Hungarian paprika good quality, sweet, imported
- 1 red bell pepper seeded/membranes removed, cut into 1/2 inch chunks
- 1 diced tomatoes canned
- 2 carrot diced
- 2 celery diced, stalks
- 5 cups beef broth
- 1 bay leaf
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- 2 tsp chili powder
- 2 tsp cumin
- 2 tsp garlic powder
- 1 tsp cayenne pepper
Instructions
- Add ground sausage to enameled dutch oven and cook on medium high heat until crumbled and cooked through.
- Remove sausage from pan, do not drain fat.
- Add stew meat to pan and cook until browned on all sides.
- When meat has been browned, remove from pan and set aside with sausage.
- Stir in onions and let soften and lightly brown, about 6 minutes, stirring occasionally to prevent burning or sticking.
- Stir in garlic, carrots, celery, and peppers.
- Cook until vegetables are soft, another 7 minutes.
- Stir in diced tomatoes, broth, beef, sausage, and seasonings and turn heat to high.
- Bring chili to a boil, and then reduce heat to low and simmer for 15-20 minutes, until chili has thickened up slightly and reduced.
- If using an Instant Pot, turn the Instant Pot to the Chili/Beans setting and place the lid on the pot - cook for 18 minutes and release naturally or manually.
- Serve immediately and enjoy!
