Easy Keto Cream Cheese Frosting
Description
Easy Keto Cream Cheese Frosting is made by whisking together softened cream cheese, vanilla extract, and a keto-friendly powdered sweetener or stevia glycerite until completely smooth and fluffy. The method can be manual or electric whisking with care taken to scrape the bowl sides and achieve a uniform mixture. This frosting is thick enough to be piped or spread on desserts such as cupcakes or cakes.
The texture is creamy and light, with sweetness adjusted depending on the sweetener form. A granulated sweetener can cause graininess, so powdered forms are recommended for the smoothest result. The vanilla adds a subtle floral note that complements the tang of cream cheese. Unlike traditional sugar frostings, this option suits keto dietary needs.
It can be used immediately and stored in an airtight container in the fridge for several days. When refrigerated, the frosting should be re-whisked to restore fluffiness before reuse. Freezing is not recommended as it may negatively affect texture and consistency.
Ingredients
- 8 ounces cream cheese cubed, soft
- 1 teaspoon vanilla extract
- 1 ½ teaspoon stevia glycerite or ½ cup of powdered sweetener
Instructions
- Place the softened cream cheese in a bowl. Add the vanilla and sweetener.
- Using a hand whisk, whisk vigorously until the frosting is completely smooth and fluffy, for about 2 minutes. If you prefer to use an electric whisk, start whisking on low speed until the mixture is uniform, then increase the speed to medium and beat until fluffy for about 1 minute, scraping the sides of the bowl with a rubber spatula as needed.
- Spoon the frosting on top of six cupcakes or use a piping bag. You can also use this frosting to frost a single-layer cake. Double the recipe if you need it for 12 cupcakes or a 2-layer cake.
Notes
- Use powdered sweetener for the smoothest texture; granulated sweeteners can feel grainy.
- Best applied immediately to frost cupcakes or cakes, storing finished desserts refrigerated for up to 3-4 days.
- Store leftover frosting in an airtight container in the fridge for 3-4 days, re-whisk before use.
- Freezing this frosting is not recommended as texture may degrade.
