Easy Lamb Bolognese
Description
Easy Lamb Bolognese begins with gently cooking onion, carrots, and celery until softened to build a flavorful vegetable base. Adding ground lamb and cooking until browned brings depth through caramelization, while leftover roast lamb can be used as an alternative to skip this step. The meat and vegetables are then combined with canned chopped tomatoes, lamb (or beef) stock, and bay leaves, and simmered for 30 minutes to meld flavors and thicken the sauce.
The resulting sauce features tender lamb pieces in a luscious tomato and vegetable stew, seasoned with salt and pepper to taste. It pairs well with spaghetti or other preferred pasta shapes, serving as a filling main dish. Freshly grated Parmesan or cheddar cheese offers a finishing salty richness that enhances the lamb's mild flavor.
This recipe is flexible, allowing substitution with beef mince or leftovers. It can also be frozen for future meals, providing a convenient make-ahead option for home cooks who enjoy a classic meat sauce adapted to lamb.
Ingredients
- 2 tablespoons olive oil or rapeseed oil
- 2 onion finely chopped, large
- 2 carrot peeled and finely chopped, large
- 2 celery finely chopped, sticks
- 1 kg ground lamb or leftover roast lamb, lean
- 2 x 400g chopped tomatoes canned
- 800 ml lamb stock I use 2 Kallo organic beef stock cubes, or beef stock, from cubes is fine
- 2 bay leaf
- salt
- black pepper
To Serve
- spaghetti or any other shape of pasta you prefer
- Parmesan Cheese or cheddar, freshly grated
Instructions
- Put the olive oil in a wide, deep saucepan and add the chopped onion, carrots and celery. Cook with the lid on over a gentle heat for about 5 minutes, until softened but not coloured.
- Turn the heat up to medium/high and add the mince. Fry for 5-10 minutes until the mince has browned all over and is flecked with darker brown. (If using leftovers, simply add in the leftovers and skip the rest of this step.)
- Tip in the chopped tomatoes, stock and bay leaves, plus salt and pepper to taste. Bring to the boil, then turn the heat down low and simmer for 30 minutes.
- Serve with spaghetti (or any other shape of pasta you wish) and grated cheese.
Notes
- Beef mince or leftover beef can replace lamb if preferred, with similar cooking results.
- The sauce freezes well, making it suitable for storage and reheating later.
