Easy Leftover Rice Casserole
Description
This casserole starts with cooked rice mixed with eggs, Parmesan cheese, chopped carrot or optional peas or mushrooms, fresh parsley, salt, and pepper, forming the base. The mixture is placed in a greased baking dish, layered with chopped cooked ham and shredded mozzarella or similar cheese. Another layer of rice mixture goes on top, finished with a breadcrumb and Parmesan topping drizzled with olive oil.
Baking at 400°F produces a golden, crisp top while the interior remains moist and holds together. The result is a richly flavored, filling dish that transforms leftover rice into a baked savory casserole suitable for lunch or dinner.
Substitutions such as peas or mushrooms for carrots are possible. Leftovers should be stored airtight in the fridge for up to two days or frozen for up to a month; reheat thoroughly before serving.
Ingredients
- ¾ cup Parmesan Cheese freshly grated, divided
- 3 tablespoons bread crumbs
- 3 cups rice cooked
- 2 large egg
- 1 small carrot chopped
- 1 tablespoon parsley finely chopped, fresh
- ¼-½ teaspoon salt
- 1-2 dashes black pepper
- 1 cup mozzarella or gruyere or fontina, shredded, firm
- 4 ounces ham chopped, cooked
- 1-2 tablespoons olive oil
Instructions
- Pre-heat oven to 400F (200C). Lightly grease and flour a 6 or 7 inch (15-18 cm) round cake pan or baking dish.
- In a small bowl mix together 1/4 cup of parmesan cheese and the breadcrumbs. Set aside.
- In a large bowl mix together the rice, eggs, ¼ cup parmesan, carrot, parsley, salt and pepper. Place half the mixture in the prepared pan and gently flatten and even out.
- Sprinkle with the chopped ham, top with shredded cheese and ¼ cup of the grated parmesan cheese. Evenly place the remaining rice on top and top with the parmesan & breadcrumb mixture. Drizzle with the olive oil. Bake for 20 minutes. Let sit 5 minutes before serving. Enjoy!
Notes
- Carrots can be replaced with ½ cup pre-boiled peas or chopped mushrooms depending on preference.
- Store leftovers in an airtight container in the fridge for up to 2 days or freeze for up to 1 month.
- Thaw frozen casserole overnight in the fridge before reheating in a skillet or microwave.
