Easy Lemon Bars

Easy Lemon Bars combine a buttery shortbread crust with a tangy lemon filling that's smooth and custardy. The crust is made using frozen butter pieces processed together with sugar and flour, baked until just firm. The filling blends sugar, flour, eggs, lemon juice, and zest, poured over the crust and baked to set with a delicate texture. These bars offer a balance of sweetness and bright citrus, ideal for a refreshing dessert or snack that holds well when chilled.

Description

Easy Lemon Bars feature a crisp shortbread crust made by blending cold butter with sugar and flour, pressed into a pan and baked until lightly golden. The filling is prepared by whisking together sugar, flour, whole eggs, lemon juice, and lemon zest, which produces a smooth, tangy layer that sets into a custard-like consistency upon baking. The bars are baked in two stages, first the crust and then the filling on top, to achieve a balance of textures.

The lemon filling provides a bright, citrus flavor that complements the rich, buttery base. The bars are cut into squares and can be served chilled or at room temperature, making them a versatile sweet treat for various occasions.
