Easy Lemon Bars
Description
Easy Lemon Bars feature a crisp shortbread crust made by blending cold butter with sugar and flour, pressed into a pan and baked until lightly golden. The filling is prepared by whisking together sugar, flour, whole eggs, lemon juice, and lemon zest, which produces a smooth, tangy layer that sets into a custard-like consistency upon baking. The bars are baked in two stages, first the crust and then the filling on top, to achieve a balance of textures.
The lemon filling provides a bright, citrus flavor that complements the rich, buttery base. The bars are cut into squares and can be served chilled or at room temperature, making them a versatile sweet treat for various occasions.
