Description

This recipe seasons lamb chops with olive oil, fresh lemon juice, crushed garlic, dried oregano, thyme leaves, chopped rosemary, chili flakes, salt, and pepper. The chops are then seared in a very hot pan for 2-3 minutes per side to create a golden-brown crust. The fat side is also seared to render the fat and add caramelization, enhancing flavor and texture.

The cooking method results in chops with a savory, aromatic herb crust and a balance of acidity from lemon juice. The chili flakes contribute a gentle heat. Resting before serving allows juices to redistribute.

  • 8 lamb chops Depending on their size, serve 1-2 per person
  • 2 tbsp olive oil
  • lemon juice juice of 1 lemon, approximately 3-4 tablespoons
  • 2-3 tsp oregano dried
  • 2 tsp thyme leaves
  • 2 tsp rosemary chopped
  • 1 tsp chili flakes or red pepper flakes
  • 4 garlic crushed, cloves
  • 1 tsp salt
  • black pepper to taste

Instructions

  1. Pre-heat a cast-iron/stainless steel pan over high heat. 
  2. Drizzle the lamb chops with the olive oil and lemon juice then generously season with the herbs, spices and garlic on both sides. 
  3. Place the lamb chops in the hot pan then sear for 2-3 minutes per side until golden brown.
  4. Flip the lamb chops onto the fat side and allow to sear until the fat has started to render and has caramelized. 
  5. Remove from the pan and allow to rest for a few minutes before serving with lemon wedges.
