Description
This pasta dish starts with sautéing finely chopped onion and minced garlic in olive oil until translucent, then adding frozen peas and lemon zest to lightly cook and release aromas. Heavy cream is added and simmered until it thickens slightly to coat the back of a spoon, creating a creamy sauce. Fresh lemon juice is stirred in cautiously to balance acidity without overwhelming the dish.
Cooked pasta is drained, reserving some cooking water to adjust sauce consistency. The pasta is combined with the cream sauce and Parmesan cheese, with reserved pasta water added incrementally to achieve a creamy, glossy coating. Seasoning with salt and black pepper customizes the flavor.
This pasta is served with extra grated Parmesan and a wedge of lemon for additional brightness. It works well as a light main course or paired with simple sides for a springtime meal that highlights fresh peas and lemon.
Ingredients
- 1 onion finely chopped
- 3 garlic minced, cloves
- 3 cups peas frozen
- 1 cup heavy cream aka whipping cream
- lemon juice and zest of 1
- ½ cup Parmesan Cheese
- salt to taste
- black pepper to taste
- 500 g (approx 1lb) pasta of your choice
Instructions
- Bring a large pot of salted water to the boil and add the pasta.
- Sauté the onion and garlic in a splash of olive oil until soft and translucent then add the peas and lemon zest.
- Pour in the cream and allow to simmer for a few minutes until the sauce coats the back of a spoon easily. Add lemon juice (start by adding half first as lemons can vary and you don't want the sauce to be too acidic) and season to taste.
- Drain the pasta, reserving 1 cup of cooking water, and add the pasta to the sauce with the Parmesan.
- Pour in some of the reserved cooking water and stir to coat the pasta in the sauce. Add more cooking water if necessary. You want the pasta to be creamy and glossy.
- Serve with extra grated Parmesan cheese and lemon for squeezing.
