Easy Lime Cake
Description
The cake relies on a cake mix base enriched with yogurt (or sour cream), neutral cooking oil, eggs, finely grated lime peel, and freshly squeezed lime juice. The batter is beaten until combined and then baked at 350°F in a prepared bundt or fluted tube pan until a toothpick inserted in the center comes out clean. After cooling slightly in the pan, the cake is removed to a wire rack to cool completely.
The glaze is made by whisking powdered sugar, melted butter, lime juice, and milk to a pourable consistency. It is spooned over the cooled cake, adding a glossy, citrus-sweet layer. Additional lime peel can be used as garnish. The balance of tangy lime flavor against the sweet glaze complements the moist cake.
Glaze thickness can be adjusted by adding more powdered sugar for thickness or milk and lime juice for thinning, allowing customization of the topping texture.
Ingredients
Cake
- 1 cake mix white or vanilla
- 1 cup yogurt not fat free, lime or sour cream
- 1/2 cup neutral cooking oil generic cooking oil
- 4 egg
- 1 tablespoon lime peel finely grated
- 3 tablespoons lime juice
Glaze
- 2 cups powdered sugar add more if you want a thicker glaze
- 3 tbsp butter melted
- 3-4 tbsp lime juice
- 1-2 tbsp milk more or less depending on consistency you want the glaze
- salt pinch
Instructions
- 1. HEAT oven to 350°F. Coat 12-cup bundt pan or 10-inch fluted tube pan with no-stick cooking spray. Dust with flour.
- 2. BEAT cake mix, yogurt or sour cream, oil, eggs, lime juice and lime peel in large bowl with electric mixer on low speed 1 minute or until moistened. Beat on medium speed 2 minutes. Spread evenly in prepared pan.
- 3. BAKE 40 to 44 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan to wire rack to cool completely.
- 4. MIX powdered sugar, melted butter, lime juice, milk and butter with a whisk in a large bowl. Once combined, spoon over bundt cake. If desired garnish with additional lime peel. Enjoy!
Notes
- Adjust glaze thickness by adding more powdered sugar gradually if thicker glaze is desired.
- Add milk or lime juice in small increments to thin the glaze to your preferred consistency.
