Easy Lo Mein Recipe

Ingredients

  • 2 tablespoons olive oil divided
  • 8 ounces spaghetti noodles
  • 1 clove garlic minced
  • 8 ounces mushrooms cleaned and sliced
  • 2 carrot peeled and cut into 1-inch slices
  • 1/2 /2 cup snow peas
  • 3 tablespoons teriyaki sauce
  • 3 tablespoons soy sauce or coconut aminos
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger grated fresh, or 1/2 teaspoon ground ginger
  • 1 tablespoon Sriracha sauce

Instructions

  1. Bring a 3-quart pot of water to boil. Drizzle in olive oil and cook noodles until just tender, about 3 to 5 minutes. Drain and set aside.
  2. Meanwhile, drizzle remaining 1 tablespoon olive oil into a large skillet over medium heat. Add garlic, mushrooms and carrots and cook until tender, about 3 to 5 minutes. Stir in snow peas and cook for about 3 more minutes.
  3. Stir together teriyaki sauce, soy sauce or aminos, honey, ginger, and sriracha sauce. Pour into skillet add drained noodles to the vegetables and sauce mixture. Toss with tongs to coat and serve.

Notes

  • Cooked lo mein keeps well in the refrigerator for a few days.
