Easy Make Ahead Apple Turnovers

These easy make ahead apple turnovers are rich and delectable. The puff pastry is full of a gooey apple filling and then topped with a delicious glaze. You can freeze them and bake them the morning of or make them all on a weekend for a brunch get-together. You're going to love them.

Ingredients

  • 2 sheets of puff pastry thawed
  • 3 small apples peeled, cored, and chopped into tiny squares
  • ½ teaspoon ground cinnamon
  • ¼ cup brown sugar
  • 1 ½ tablespoons butter
  • 1 teaspoon cornstarch
  • 1 egg
  • 1 tablespoon water
  • ½ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. In a small pot melt your butter. Once melted add your apples and cook for around 3 minutes until softened. Add your brown sugar and cinnamon and cook for another 2 minutes until caramelized. Stir in the cornstarch and cook until thickened about a minute. Take off of the heat and let cool until it’s room temperature. 
  2. On a floured surface, roll out your puff pastry dough and cut each sheet into four, for a total of eight squares. Add your apple mixture to each square around 1-2 tablespoons per square. 
  3. In a small bowl mix one egg and 1 tablespoon of water and brush over all the sides of the squares before folding. Once folded brush each side again and make divots around the edges with a fork.
  4. Add to a baking pan with parchment and bake at 350 for 25-30 minutes 

To Make The Glaze

  1. Combine the powdered sugar and milk together until combined and drizzle over the hot pastries 

To Make Ahead and Freeze

  1. Follow steps 1-3 then place the pan in the freezer to freeze. Once frozen, wrap each turnover with foil and keep until you’re ready bake. 
  2. Preheat oven to 350 and bake for 35-40 minutes
