Easy Mashed Turnips
Description
The Easy Mashed Turnips recipe starts by boiling diced turnips with white vinegar, keto sweetener, and salt to both cook and flavor them. After draining, the turnips and sliced garlic cloves are tossed in olive oil and roasted until golden and tender, enhancing their natural sweetness and adding a roasted depth.

Ingredients
- 6 turnip about 1 1/2 pounds or 700g) peeled and diced, medium size
- 7 to 9 to 9 garlic sliced in halves, cloves
- 1 tablespoon white vinegar
- 1 tablespoon sugar substitute
- 1 teaspoon salt (in water) + 1/4 teaspoon salt (in mash)
- 1 tablespoon olive oil
- 1 tablespoon butter
- ½ teaspoon white pepper
Instructions
- Preheat the oven to 220 °C - 425 °F
- Add diced turnips to a pan with 1 tablespoon white vinegar, 1 tablespoon keto sweetener (like erythritol) and 1 teaspoon of salt. Fill the pan with water to cover the turnips and bring it to a boil for about 15 minutes.
- Drain the turnips of water, and transfer them to a baking pan, together with the garlic cloves. Toss them with one tablespoon of olive oil, and take into the oven to roast for about 35 minutes, or until tender and golden. Stir the turnips at half time, to cook evenly.
- Transfer roasted turnips and garlic to a large bowl, add the butter, white pepper and 1/4 teaspoon of salt. Mash the turnips with a fork or potato masher until desired consistency. Serve hot.
Notes
- Younger or smaller turnips taste milder with less bitterness and pepperiness compared to larger ones.
- Hand-mashing gives a rustic, chunkier texture; use a food processor for smoother consistency.
- Smaller diced turnips cook faster; larger pieces need more time.
- For creamier mash, add heavy cream or sour cream in small amounts until desired texture is reached.
