Easy Mediterranean Chicken

Juicy chicken thighs baked with tomatoes, olives and capers. You’re going to love this easy Mediterranean chicken recipe for a simple family dinner.

Ingredients

Servings
  • 8 chicken thighs
  • 1-2 tbsp olive oil
  • 4 garlic cloves crushed
  • 1 cup white wine (substitute with chicken stock)
  • 400 g (14oz) cherry tomatoes
  • 100 g (3oz) pitted kalamata olives
  • 4 tbsp capers
  • handful fresh basil
  • salt and black pepper to taste

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Pat the chicken dry with paper towels then drizzle with a few teaspoons of olive oil.
  3. Season generously with salt and pepper.
  4. Place the chicken, skin-side down, in a large, oven-proof pan or skillet set over medium heat.
  5. Allow the chicken to brown for 10 minutes then remove from the pan.
  6. Add the garlic to the pan and cook for a few seconds then pour in the white wine.
  7. Add the browned chicken back to the pan then add the tomatoes, olives, capers and fresh basil.
  8. Place in a hot oven and allow to bake for 15-20 minutes until the chicken is cooked and the tomatoes are soft. 
  9. Remove from the oven, scatter over fresh parsley or more basil and serve.
