Easy Mediterranean Chicken

Juicy chicken thighs baked with tomatoes, olives and capers. You’re going to love this easy Mediterranean chicken recipe for a simple family dinner.

Ingredients
- 8 chicken thighs
- 1-2 tbsp olive oil
- 4 garlic cloves crushed
- 1 cup white wine (substitute with chicken stock)
- 400 g (14oz) cherry tomatoes
- 100 g (3oz) pitted kalamata olives
- 4 tbsp capers
- handful fresh basil
- salt and black pepper to taste
Instructions
- Preheat the oven to 200°C/390°F.
- Pat the chicken dry with paper towels then drizzle with a few teaspoons of olive oil.
- Season generously with salt and pepper.
- Place the chicken, skin-side down, in a large, oven-proof pan or skillet set over medium heat.
- Allow the chicken to brown for 10 minutes then remove from the pan.
- Add the garlic to the pan and cook for a few seconds then pour in the white wine.
- Add the browned chicken back to the pan then add the tomatoes, olives, capers and fresh basil.
- Place in a hot oven and allow to bake for 15-20 minutes until the chicken is cooked and the tomatoes are soft.
- Remove from the oven, scatter over fresh parsley or more basil and serve.
