Easy Mini Apple Cheddar Pies

These mini apple cheddar pies combine tender cooked apples with sharp white cheddar cheese, all wrapped in flaky puff pastry. The apples are softened with butter, brown sugar, and apple pie spice, giving a warm, gently spiced sweetness that pairs well with the cheese's savory sharpness. The pies bake until golden brown with a crunchy sugar topping, offering a delightful mix of textures. They make a versatile snack or dessert that is best served shortly after baking to enjoy the crisp pastry and melty cheese.

Description

Easy Mini Apple Cheddar Pies bring together chopped apples cooked with butter, brown sugar, and apple pie spice for a soft, sweet filling enhanced by a pinch of salt. The paddle of sharp white cheddar cheese adds a contrasting savory note beneath and atop the apples. The filling is enclosed between two sheets of puff pastry and cut into nine neat squares, their edges pressed with a fork to seal. After brushing with egg wash and sprinkling with coarse sugar and additional spice, they bake until the pastry is crisp and golden, creating a pleasing balance of flaky crust, tender fruit, and melted cheese.

The use of individual mini pies makes portioning simple and offers a convenient finger food experience. The apple pie spice and brown sugar elevate the fruit’s natural sweetness, while the cheddar introduces a savory depth. The combination works well as a slightly indulgent treat or an accompaniment to tea or coffee.

Serving them shortly after baking is ideal to preserve the crisp puff pastry texture and enjoy the cheese while still soft. These mini pies can also be cooled slightly for easier handling. The straightforward preparation and baking method suits home cooks looking for a mildly spiced, fruit-filled pastry with an unexpected cheese element.

Ingredients

  • 2 puff pastry thawed, sheets of
  • 2 apple peeled and chopped, large
  • 3 tablespoons butter unsalted
  • 1 tablespoon brown sugar
  • 1 teaspoon apple pie spice plus more for sprinkling, brand McCormick
  • pinch salt
  • 6 ounces cheddar cheese cut into pieces, sharp, white
  • 1 egg lightly beaten, large
  • 1 tablespoon sugar coarse raw

Instructions

  1. Heat a saucepan over medium-low heat and add the butter. Toss in the apples with the sugar, apple pie spice and salt and toss. Cook, stirring often, for about 5 to 6 minutes until the apples start to soften.
  2. Preheat the oven to 425 degrees F.
  3. Place a sheet of parchment paper on your work surface. Place one sheet of puff pastry on top. Spoon 1 to 2 teaspoons of the apple cubes on the puff pastry – sort of like you’re working on a tic tac toe board. Place a slice or a few crumbly pieces of cheddar under and on top of the apples. Cover the entire thing with the other sheet of puff pastry. Use a large knife or pizza cutter to cut the pastry into 9 squares, just around the edges. Use a fork to press the edges together.
  4. Brush the tops with the beaten egg wash. Sprinkle with the raw sugar and a touch of Apple Pie Spice. Bake for 20 to 25 minutes, or until golden brown. Let cool slightly, then serve. These are best served shortly after making.
