Easy Mixed Berry Cobbler
Description
This cobbler starts with about 2 pounds of mixed berries placed in a 9x13-inch pan, fresh or frozen. Lemon zest and juice add brightness, while sugar, flour, and optional cornstarch thicken the filling as it cooks. The topping combines melted butter with dry yellow cake mix, mixed lightly to maintain a crumbly texture rather than smooth batter.
During the 40 to 50 minute bake at 350°F, the cake mix topping browns to a golden shade and the berries release juices that bubble through. The contrast between the fresh, sweet-tart berry filling and the rich, crumbly topping provides a pleasing texture and taste. Serving warm with vanilla ice cream or whipped cream upgrades this simple dessert.
Leftovers can be kept covered at room temperature for about two days before refrigerating. The recipe notes that canned blueberry pie filling can substitute some berries and dry ingredients if desired, but cherries are not recommended due to their low juice content which can make the cobbler dry.
Ingredients
For the berry filling
- 2 pounds mixed berries fresh or frozen
- lemon optional, zest from 1
- 1 tablespoon lemon juice fresh
- 3/4 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 tablespoon cornstarch optional
For the topping
- 1 box yellow cake mix
- 1/2 cup butter melted (1 stick)
Instructions
- Preheat the oven to 350 degrees F.
- In a 9x13 inch pan, add the frozen or fresh berries. If they are frozen there is no need to thaw. Add the zest of 1 lemon and 1 tablespoon lemon juice.
- Add 3/4 cup sugar, 1/2 cup flour, and 1/2 tablespoon cornstarch. (You can skip the cornstarch if you like a really juicy cobbler). Stir the dry ingredients into the berries.*
- In a separate bowl, melt the butter. Add the dry cake mix and chop lightly with a fork; it’s okay if there are some dry spots. Don't over mix. You want it to be crumbly, not smooth. Spoon the mixture over the top of the berries.
- Bake the cobbler at 350 degrees F for about 40-50 minutes, until the top starts to turn golden and the berries are bubbly.
- Let cool for a few minutes, then serve warm with vanilla ice cream or whipped cream!
- Store leftovers covered on the counter for 2 days. After that store in the fridge.
Notes
- You can substitute 1 pound of berries and dry ingredients with one can of blueberry pie filling mixed into the remaining berries for convenience.
- Cherries are not recommended as they don’t release enough juice, which can result in dryness.
- Leftover cobbler can be stored covered on the counter for up to 2 days, then refrigerated afterward.
- Serve warm topped with vanilla ice cream or whipped cream for a traditional dessert experience.
