Easy Mushroom Sauce
Description
This sauce begins by sautéing sliced mushrooms in vegetable oil until they release moisture and begin to brown. Shredded carrot and diced onion are added and cooked together to develop sweetness and soften the vegetables. Separately, flour is browned in a skillet to form a roux, which is gradually blended with vegetable stock to create a smooth sauce base without lumps.
The mushroom mixture is then combined with the sauce and sour cream, stirring until integrated and creamy. Salt and freshly ground black pepper adjust the flavor. Fresh parsley is added as a garnish, providing a fresh contrast to the rich sauce.
The dish offers a smooth, creamy texture with an earthy mushroom flavor enhanced by the sweetness of carrot and onion. It works well as a topping or side sauce, suitable for a variety of dishes needing a mild mushroom accompaniment.
Ingredients
- 1 lb mushroom sliced
- 2 tbsp vegetable oil
- 1 carrot medium, shredded
- ½ onion large, diced
- 3 tbsp all-purpose flour
- 2 cups vegetable stock or chicken stock
- ½ cup sour cream (I am using Daisy Sour Cream)
- salt
- black pepper
- parsley fresh, chopped; to garnish
Instructions
- In a large skillet, saute the mushrooms in vegetable oil on medium heat for about 10 minutes.
- Add carrot and onion and keep cooking for another 10 minutes.
- Meanwhile prepare the sauce. In a separate skillet, slightly brown the flour on medium heat. Add vegetable stock, one cup at a time, and stir vigorously until no lumps remain.
- Add the sauce to the mushrooms together with sour cream and stir everything together. Taste if the dish needs salt and add a little pepper. Stir again, and turn off the heat.
- Garnish with fresh parsley.
