Easy Mushroom Stroganoff is a hearty pasta dish made with ground beef, sautéed mushrooms, and a creamy sauce from condensed mushroom soup and sour cream. The sauce envelops egg noodles, providing a comforting blend of savory flavors and tender textures suitable for everyday meals.

Description

This Stroganoff starts by browning lean ground beef with chopped onions and garlic powder for a mild aromatic base. Sliced mushrooms (fresh or canned) are added along with beef broth, simmered to develop flavor. Condensed mushroom soup enriches the sauce, thickening and intensifying the mushroom taste.

Sour cream is stirred in last to add creaminess without curdling, and cooked egg noodles are folded in to absorb the sauce. The preparation is finished with freshly ground pepper and salt to taste and garnished with parsley to add a touch of freshness.

The result is a rich, creamy stroganoff with tender beef and mushrooms complementing the soft noodles. It warms well for leftovers, but keeping noodles separate before storing helps prevent them from becoming overly soft.

Ingredients

  • ½ pound ground beef lean
  • ½ onion chopped
  • 1 teaspoon garlic powder
  • 8 ounces mushrooms sliced, or 1 can sliced mushrooms, drained
  • 1 ½ cups beef broth
  • salt to taste
  • black pepper to taste
  • 10 ½ ounces condensed cream of mushroom soup
  • ½ cup sour cream
  • 3 cups egg noodles measured dry and cooked al dente, large

Instructions

  1. Add beef to a 12" skillet saucepan with chopped onion and garlic powder. Cook over medium-high heat until the beef is browned and the onion is soft. Drain fat.
  2. Add the mushrooms, broth, and salt & pepper to taste, simmer 10 minutes. Add mushroom soup and simmer 5 minutes more.
  3. Stir in sour cream and cooked pasta. Cook on low just until heated through.
  4. Garnish with parsley and serve.

Notes

  • Simmer the sauce gently to thicken without overcooking.
  • Cook noodles to just al dente as they will finish cooking in the sauce.
  • If preparing leftovers, store noodles separately to avoid sogginess.
