Ingredients
- ¼ cup dried cranberries finely chopped
- ¼ cup pecans
- 1 ¼ cups old fashioned oats
- ½ cup peanut butter creamy or crunchy
- ¼ cup honey or agave syrup
- 3 coops cacao bliss
- 1 tablespoon flaxseed meal
- ¼ cup mini chocolate chips optional
Instructions
- Place cranberries and pecans in the food processor. Pulse a couple of times to break them up.
- Add remaining ingredients (except chocolate chips if using) and pulse in the food processor until it holds together and thickens.
- Line a baking sheet with parchment paper. Mix in chocolate chips if using.
- Scoop the mixture into 12 balls with a cookie scoop. Roll smooth and place on the prepared pan.
- Chill 2 hours before serving.
Notes
- If you don’t have a food processor, finely chop the nuts and mix all ingredients by hand to combine.
- Peanut butter consistency may vary by brand; add extra oats if the mixture is too wet to hold shape.
- Chill the balls at least 2 hours for firmness before serving.
