  • ¼ cup dried cranberries finely chopped
  • ¼ cup pecans
  • 1 ¼ cups old fashioned oats
  • ½ cup peanut butter creamy or crunchy
  • ¼ cup honey or agave syrup
  • 3 coops cacao bliss
  • 1 tablespoon flaxseed meal
  • ¼ cup mini chocolate chips optional

Instructions

  1. Place cranberries and pecans in the food processor. Pulse a couple of times to break them up.
  2. Add remaining ingredients (except chocolate chips if using) and pulse in the food processor until it holds together and thickens.
  3. Line a baking sheet with parchment paper. Mix in chocolate chips if using.
  4. Scoop the mixture into 12 balls with a cookie scoop. Roll smooth and place on the prepared pan.
  5. Chill 2 hours before serving.

Notes

  • If you don’t have a food processor, finely chop the nuts and mix all ingredients by hand to combine.
  • Peanut butter consistency may vary by brand; add extra oats if the mixture is too wet to hold shape.
  • Chill the balls at least 2 hours for firmness before serving.
