Easy No Bake Peanut Butter Bars

This recipe layers a rich base made from melted butter mixed with graham cracker crumbs, old fashioned rolled oats, powdered sugar, and peanut butter pressed firmly into a pan. The top layer is a blend of peanut butter and semisweet chocolate chips melted together to create a glossy finish. The bars are cooled until firm, allowing easy slicing.
The texture combines the slight chew of oats and crunchy graham crumbs with the creamy peanut butter and chocolate topping. The balance of sweetness from powdered sugar and chocolate is offset by the nutty peanut butter. This treat requires no oven time, making it a convenient option.
These bars are well suited as snacks or desserts and keep well at room temperature covered tightly. Using old fashioned oats is important for the right texture, as instant oats will not provide the same structure.
Ingredients
- 1 cup butter melted, or margarine
- 2 cups graham cracker crumbs
- 1 cup rolled oats see note
- 2 ⅓ cups powdered sugar
- 1 ½ cups peanut butter divided, creamy
- 1 ½ cups semisweet chocolate chips
Instructions
- Combine melted butter, graham crack crumbs, rolled oats, powdered sugar, and 1 cup peanut butter in a large bowl. Mix well. Press dough into a 9x13 inch pan.
- In a microwave safe bowl combine chocolate chips and remaining 1/2 cup creamy peanut butter. Microwave on high for 1 minute. Stir. Return to microwave and heat for 20 seconds, stir and repeat process until chocolate is melted and smooth.
- Spread melted chocolate/peanut butter over bottom layer in the pan. Allow to cool completely before cutting into bars. (you can allow them to cool at room temperature or in the fridge for quicker results) Store at room temperature in airtight container.
Notes
- Use old fashioned rolled oats, not instant oats, for the best texture.
