Easy Nut & Maple Cookies

Maple cookies are an easy cookie recipe made with maple syrup and chopped nuts. They're soft and chewy, the best cookie for the fall and holiday season.

Ingredients

  • cups all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 pinch salt*
  • ¾ cup butter (softened)
  • ½ cup brown sugar (lightly packed)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla or maple flavouring
  • ½ cup maple syrup
  • ½-¾ cup pecans or walnuts (coarsely chopped)

  • 13-26 half or whole pecans or walnuts

Instructions

  1. Pre-heat oven to 375F (190C). Line 1-2 cookie sheets with parchment paper.
  2. In a medium bowl whisk together the flour, baking powder, baking soda and salt.
  3. In the mixing bowl cream the butter and brown sugar for approximately 2 minutes. Add the egg and flavouring, beat well. Alternately add the whisked flour ingredients with the maple syrup, beat well between each addition, fold in the nuts.
  4. Drop by spoonfuls on the prepared cookie sheets, top each cookie with a half or whole nut. Bake for approximately 8-12 minutes, when they are set on top and lightly golden around the edges they are ready. Let cool on the pan for 5-10 minutes then move to a wire rack to cool completely. Enjoy!

Notes

  • For room temperature, remove from the fridge 30-60 minutes before using.
  • Chill the dough while the oven is pre-heating 15-20 minutes, this will help the cookies to rise more rather than spread.
  • Once the cookies are fully cooled, store them in an airtight container. You can keep them at room temperature for a couple of days or you can freeze them for up to a month.
