Easy Oatmeal Raisin Cookie Recipe
Description
The Easy Oatmeal Raisin Cookie recipe mixes creamed butter and sugars with eggs and vanilla, then incorporates flour combined with baking soda, cinnamon, and optional salt. Quick or old fashioned oats and raisins fold in to create a hearty dough. The dough is portioned with a scoop onto ungreased cookie sheets and baked at 350°F until lightly golden around the edges, yielding a chewy yet tender cookie with the natural sweetness of raisins.
The cookies balance spice from cinnamon and the comforting texture from oats with the rich softness of butter. As they cool on a wire rack, the centers remain moist while the edges crisp slightly. These cookies can be baked fresh or frozen as dough balls for later baking. Adjustments for high altitude baking increase flour slightly for structure. Proper storage in airtight containers maintains fresh texture.
Ingredients
- 1/2 cup unsalted butter softened, + 6 tbsp unsalted butter
- 3/4 cup brown sugar packed
- 1/2 cup sugar
- 2 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt optional
- 3 cups quick oats or old fashioned oats
- 1 cup raisins
Instructions
- Preheat the oven to 350°F.
- Add butter and sugars to a stand mixer and beat until cream. Add eggs and vanilla and beat until fluffy.
- In a separate bowl mix together the dry ingredients - flour, baking soda, cinnamon and salt and mix well. Add the flour to the sugar mixture and stir. Add oats and raisins and mix until combined.
- Use cookie scoop to scoop out dough onto ungreased cookie sheet. Bake for 8-10 minutes.
- Remove to wire rack and let cool.
Notes
- At high altitudes, increase the flour to 1 3/4 cups and bake as directed for best results.
- Store baked cookies in an airtight container at room temperature to preserve freshness.
- Cookie dough balls can be frozen in zip-top bags and baked directly from frozen, adding a minute or two to baking time.
