Easy One Pot Creamy Lemon Chicken Pasta

Loaded with chicken, garlic, and a creamy lemon sauce, this creamy lemon chicken pasta is made in just one pan in under 30 minutes!

Ingredients

Servings
  • 1 small onion about 1/2 cup, diced
  • 4 cloves garlic finely minced or pressed
  • 2 chicken breast cubed, boneless
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 1/2 teaspoon basil dried
  • 1/2 teaspoon red pepper flakes optional
  • 3 cups water or chicken broth
  • 12 oz pasta I used penne, but you can Spaghetti, Elbows, Linguine or Rotini or your favorite shape, boxed
  • lemon zest about 1 tablespoon
  • 1/4 cup lemon juice from the same lemon, freshly squeezed
  • 1/2 cup light cream or heavy cream

Instructions

  1. Heat the olive oil in a large 10-12'' pan. Add the diced onions and cook for 2-3 minutes or until tender, add the garlic and cook for another 30 seconds; add the diced chicken and spices and cook for 5-7 minutes or until lightly browned.
  2. Next add the pasta and water or chicken broth and cook for 8-12 minutes or until pasta is al-dente. Lastly, add the lemon zest, lemon juice, and cream. Mix well and cook for another minute then remove from heat, while leaving the pasta still wet.
  3. Top with fresh lemons, basil, or parmesan cheese. Enjoy!
