Easy One Skillet Lasagna

Easy One Skillet Lasagna layers broken lasagna noodles with a savory ground beef marinara sauce, seasoned with Italian herbs, alongside a creamy cottage cheese and fresh parsley mixture. Topped with mozzarella cheese, it’s baked until noodles are tender and the cheese melts golden. This approach simplifies traditional lasagna with fewer steps and a single baking dish.

Description

Easy One Skillet Lasagna starts by sautéing onions and garlic, then browning ground beef before adding marinara sauce and Italian seasoning. The sauce is simmered to meld flavors, then layered in a skillet with broken lasagna noodles and a cottage cheese blend mixed with fresh parsley. Mozzarella cheese is added between layers for a melty finish. Covering the skillet with foil traps moisture while baking, allowing the noodles to cook in the sauce until tender. Finishing with a brief rest ensures the lasagna holds together when served.

This version streamlines classic lasagna by using broken noodles and cooking everything in one pan, reducing cleanup and preparation complexity. Garnishing with fresh parsley or basil adds a bright herbal note to the rich cheeses and meat sauce. It serves as a satisfying and approachable dinner option without multiple dishes or excessive steps.

Variations include swapping cottage cheese for ricotta, using no-boil noodles with adjusted bake time, or mixing in Italian sausage with ground beef. Adding red pepper flakes can introduce gentle heat, and different prepared sauces allow flavor customization. The recipe adapts well to pan size and available ingredients, making it versatile for home cooks.

Ingredients

Servings
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 lb ground beef
  • 24 ounces marinara sauce
  • 1 tablespoon Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1 cup cottage cheese
  • 3/4 cup parsley chopped fresh flat-leaf
  • salt to taste
  • black pepper to taste
  • 2 cups mozzarella cheese grated, divided
  • 8 pieces lasagna noodles each broken into 4 or 5 (you can use no-boil, but cook it for slightly less time)

Instructions

Make the Sauce

  1. Heat oven to 400°F.
  2. Heat the oil in a cast-iron skillet over medium heat. Add the onion and saute 5-6 mins til onion is soft, add the garlic and cook a further minute.
  3. Add the ground beef and cook 4-5 mins until no longer pink.
  4. Add the pasta sauce and Italian Seasoning and simmer, stirring occasionally around 5-6 mins.
  5. Season with salt and pepper to taste.

Assembly

  1. Transfer 2/3 of the meat sauce to a bowl, leaving 1/3 the sauce in the skillet
  2. Lay half the noodles over the sauce in the skillet, spoon half the cottage cheese mixture over the noodles, sprinkle 1/2 cup of mozzarella, then repeat with sauce, noodles, cottage cheese,1/2 cup mozzarella and last 1/3 of the sauce.

Bake

  1. Cover the pan tightly with foil and bake until the noodles are tender, 25 to 30 mins.
  2. Remove from the oven, and let it rest a few minutes - broiling the top if desired.

To serve

  1. Garnish with chopped parsley or fresh basil.
  2. Devour.

Notes

  • Cottage cheese can be replaced with ricotta for a creamier texture.
  • No-boil lasagna noodles reduce bake time but may affect layering.
  • Use different marinara sauces to customize flavor; even diced tomatoes with seasonings work.
  • For variation, mix half ground beef with Italian sausage.
  • Adding red pepper flakes with Italian seasoning adds a mild spicy kick.
