Easy Oven-Roasted Cauliflower

Oven-Roasted Cauliflower is a simple and delicious way to enjoy a healthy vegetable. This versatile recipe only calls for a handful of ingredients you probably already have in your pantry and turns out perfectly crispy yet super tender every time.

Ingredients

  • 1 cauliflower cut into florets, about 4 cups, large head
  • 2-3 Tbsp olive oil or avocado oil
  • 1 ½ - 2 tsp. seasoning mix
  • ½ tsp. salt to taste
  • ¼ tsp. black pepper to taste

Mexican Taco*

  • 1 ½ tsp. taco seasoning mix homemade
  • cilantro finely chopped, fresh

Italian Parmesan*

  • 1 ½ tsp. Italian Seasoning Mix homemade
  • Parmesan Cheese grated
  • parsley finely chopped, fresh
  • red pepper flakes

Blackened Cajun*

  • 1 ½ tsp. Cajun seasoning
  • parsley finely chopped, fresh

Indian Curry*

  • ¾ tsp. curry powder
  • ½ tsp. Coriander
  • ¼ tsp. paprika
  • cilantro finely chopped, fresh

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut cauliflower into bite-sized florets.
  3. Add cauliflower florets and oil to a large bowl. Toss until cauliflower is well coated.
  4. Sprinkle seasoning mix of choice, salt, and pepper over cauliflower. Toss to combine.
  5. Line a large baking sheet with parchment paper. Add cauliflower and spread out into a single layer.
  6. Bake cauliflower in preheated oven for 25-30 minutes, flipping halfway through, or until crisp and tender.
  7. Sprinkle with additional fresh herbs (parsley or cilantro), red pepper flakes, or serve with Parmesan cheese and enjoy!

Notes

  • Nutritional information is calculated with taco seasoning mix.
  • To Prep-Ahead: You can chop the cauliflower up to 2 to 3 days ahead of time if you didn’t buy pre-chopped.
  • To Store: Store leftover cauliflower in an airtight container in the refrigerator for up to 4-5 days.
