Description
This recipe calls for cutting scrubbed potatoes into 1-inch cubes without peeling, preserving texture and nutrients. Soaking the potatoes in cold water up to an hour helps remove surface starch, resulting in fluffier roasted potatoes. They are then drained, dried, and tossed with olive oil, garlic powder, herbs such as rosemary, parsley, thyme, or basil (fresh or dried), paprika, salt, and black pepper.
The seasoned potatoes roast on a baking sheet at 425°F for about 30 to 35 minutes until evenly browned and tender inside. The combination of olive oil and herbs imparts an aromatic and savory flavor, while roasting at high heat helps develop crispy edges.

Ingredients
- 2 pounds potato or yellow or Yukon gold potatoes, red
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 3 tablespoons fresh herbs any combination of rosemary, parsley, thyme, or basil, or 2 teaspoons dried herbs, chopped
- ½ teaspoon paprika
- kosher salt to taste
- black pepper to taste
Instructions
- Preheat oven to 425°F.
- Scrub potatoes (do not peel them). Dice into 1” cubes.
- If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potato). Drain and dry potatoes, if required.
- Toss potatoes, olive oil, herbs, and seasonings
- Place on a baking sheet and bake for 30-35 minutes until browned and tender.
Notes
- Feel free to substitute fresh herbs with 1-2 teaspoons of dried herbs if fresh are unavailable.
- Any type of potato works, and peeling is optional depending on your texture preference.
