Easy Oven Roasted Potatoes

Easy Oven Roasted Potatoes use diced, unpeeled potatoes tossed with olive oil, garlic powder, fresh or dried herbs, paprika, salt, and pepper. Baking at high heat crisps the exterior while keeping the interior tender, producing flavorful golden brown potatoes that complement many meals.

Description

This recipe calls for cutting scrubbed potatoes into 1-inch cubes without peeling, preserving texture and nutrients. Soaking the potatoes in cold water up to an hour helps remove surface starch, resulting in fluffier roasted potatoes. They are then drained, dried, and tossed with olive oil, garlic powder, herbs such as rosemary, parsley, thyme, or basil (fresh or dried), paprika, salt, and black pepper.

The seasoned potatoes roast on a baking sheet at 425°F for about 30 to 35 minutes until evenly browned and tender inside. The combination of olive oil and herbs imparts an aromatic and savory flavor, while roasting at high heat helps develop crispy edges.

This method works with any potato variety, and peeling is optional, allowing you to customize texture and appearance. The flexibility in herb choice enables seasonal adaptation or use of pantry staples.
