Easy Pad Thai Recipe
Description
The recipe "Easy Pad Thai Recipe" uses rice noodles, shrimp, and tofu as the main components. The noodles are softened by soaking, then stir-fried with shrimp and tofu cubes in vegetable oil. Eggs are scrambled directly in the hot oil to add protein and texture. A sauce made from rice vinegar, fish sauce, sugar, and red pepper flakes lightly coats the ingredients, balancing sweet, sour, salty, and spicy notes. Fresh vegetables and peanuts added just before serving contribute crispness and textural contrast. Lime wedges accompany the dish to customize the acidity on the plate.
This version omits tamarind paste, a traditional ingredient, making the recipe more accessible while still maintaining a tangy flavor. Cooking the shrimp and tofu separately before adding in noodles and eggs helps maintain their texture. The method emphasizes quick cooking over high heat, preserving the ingredients' freshness and vibrancy.
The dish pairs well with fresh herbs like cilantro (optional) and makes a satisfying meal on its own. The combination of protein, vegetables, and noodles presents a balanced plate with varied textures and well-rounded flavors.
Ingredients
- 14 ounce rice noodles
- 1/4 cup vegetable oil
- 1 pound Shrimp , peeled and deveined
- 8 ounces tofu cut into 1/2 inch cubes, extra firm
- 3 large egg
- 2 tablespoons rice vinegar
- 1/4 cup fish sauce
- 1/3 cup sugar
- 1/2 teaspoon red pepper flakes crushed
- 1 cup bean sprout
- 3 carrot julienned
- 1/4 cup peanuts crushed
- 2 green onions , chopped
- 1 lime , cut into wedges
- cilantro , for garnish (optional)
Instructions
- Add the rice noodles to boiling water for 1 minute, then turn off the heat and let sit for five minutes.
- When softened rinse with cold water and set aside.
- Add vegetable oil to a wok on high heat and add the shrimp and tofu cubes.
- Cook for 1-2 minutes on each side, then remove the shrimp and tofu from the pan (leave the oil in the pan).
- Add the eggs into hot oil, and chop with a spatula into little pieces as your cooking them.
- Add softened noodles, shrimp, tofu, rice vinegar, fish sauce, sugar and red pepper.
- Serve topped with peanuts, bean sprouts, carrots, green onions and lime wedges.
Optional
- Some recipes call for Tamarind Paste. We don't add it because it is an obscure ingredient and the recipe tastes great, even without it. If you prefer to add in the paste, add in 2 tablespoons of paste in step 6 with the rest of the sauce ingredients and stir well until combined.
