Easy Peach Fluff Salad
Description
Easy Peach Fluff Salad is made by dissolving peach gelatin in hot water, then adding cold water and chilling briefly. Instant vanilla pudding mix is whisked in and the mixture is chilled again to thicken. Thawed whipped topping is folded together with the pudding base, drained diced peaches, and mini marshmallows, combining creamy, fruity, and sweet chewy elements.
After mixing, the salad is refrigerated for at least 2 hours or overnight, allowing flavors to meld and the marshmallows to soak up the flavored gelatin-pudding mix, softening them pleasantly. The final texture is light and airy but substantial from the peaches and marshmallows.
This salad works well as a dessert or side dish at gatherings, offering a fruity, creamy contrast to richer dishes.
Variations include using different pudding flavors such as cheesecake or coconut cream, adding cream cheese or crushed graham crackers for cheesecake-like texture, and mixing in nuts or other fruits to modify texture and flavor profiles.
Ingredients
- 3 ounce peach gelatin mix or half of a 6 ounce, Jell-O brand
- 1 cup water hot
- ½ cup water cold
- 5.1 ounce instant vanilla pudding mix box
- 8 ounces whipped topping thawed (Cool Whip)
- 45 ounces sliced peaches in water or juice, drained, patted dry and cut into cubes
- 3 cups mini marshmallows
Instructions
- In a large mixing bowl, add the Jello mix. Then pour the hot water in and stir until all of the powder dissolves. Add in the cold water and stir well. Place the bowl in the refrigerator for 15 minutes and allow it to cool a little bit.
- Add the instant pudding powder and blend well with a whisk. Then place the bowl back in the refrigerator for another 15 minutes.
- Then add in the thawed Cool Whip, the drained, diced peaches, and marshmallows. Gently stir until blended completely.
- Place the bowl back in the refrigerator for at least 2 hours for the fluff to thicken more and the marshmallows to soak up the flavors and soften. You can even refrigerate it overnight.
Notes
- Use fresh, ripe peaches for best flavor; frozen peaches are not recommended due to texture changes.
- Different pudding flavors can be substituted to alter the flavor, such as cheesecake, white chocolate, or coconut cream.
- Add softened cream cheese and crushed graham crackers for a cheesecake-like variation.
- Incorporate toasted nuts like sliced almonds or pecans, or coconut flakes for added texture and flavor.
- Additional fruits like bananas, blueberries, pineapple, or mango can be stirred in to diversify the salad.
- Swapping cottage cheese for vanilla pudding offers a creamy texture with subtle tanginess.
