Easy Peanut Butter Fudge

This peanut butter fudge combines creamy peanut butter, salted butter, and confectioners sugar into a rich, smooth confection that sets firm after chilling. The mixture is microwaved until melted and blended, then packed into a pan and refrigerated. A touch of vanilla enhances the flavor, while optional flaky sea salt offers a contrasting finish. The firm, sliceable texture makes it easy to serve in small squares, perfect as a sweet treat or dessert addition.

Description

Easy Peanut Butter Fudge blends creamy peanut butter and salted butter melted together in the microwave until smooth. Gradually folding in sifted confectioners sugar and vanilla develops a thick, sweet mixture that firms up after chilling. When pressed into a lined pan and chilled for several hours, the fudge solidifies into a sliceable, rich treat. Optional sprinkling of flaky sea salt adds an interesting finish by balancing the sweet, creamy base with a light savory note.

The fudge has a velvety texture and dense sweetness common to classic peanut butter fudge. The recipe uses common pantry ingredients and requires minimal preparation, relying on chilling to set the final product.

Once firm, use the parchment paper to lift the fudge out of the pan and slice into squares for serving. Refrigerate leftovers in an airtight container for up to two weeks or freeze for longer storage, keeping the fudge fresh and ready to enjoy.

The notes suggest that creamy peanut butter of widely available brands works best, and natural peanut butter can be used if stirred thoroughly. Alternatively, this fudge can be made on the stovetop by melting the butter and peanut butter and then mixing in the sugar and vanilla off the heat.

Ingredients

Servings
  • 1 cup peanut butter
  • 1 cup butter cut into tablespoon pieces, salted
  • 3 1/2 cups confectioners sugar sifted
  • 2 teaspoons vanilla extract pure
  • sea salt for sprinkling on fudge, optional, flaky

Instructions

  1. Line an 8x8-inch pan with parchment paper, leaving an overhang on the sides. Set the pan aside.
  2. Place the peanut butter and butter in a large microwavable bowl. Microwave on high for 2 minutes. Stir and microwave for 1 more minute. Stir until mixture is smooth and creamy.
  3. Add the confectioner’s sugar, a little at a time, and stir until smooth. Stir in the vanilla extract. The mixture will be thick.
  4. Press the mixture into the prepared pan and spread with a spatula until even and smooth. Sprinkle with flaky sea salt, if using.
  5. Transfer the pan to the refrigerator and chill for 4 hours or until fudge is firm. When the fudge is set up, use the parchment paper to lift the fudge out of the pan. Use a sharp knife to cut the fudge into small squares and serve.
  6. Store the fudge in an airtight container in the fridge for up to 2 weeks. You can also freeze the fudge. Wrap in plastic wrap and place in a freezer bag or freezer container and freeze for up to 2 months.

Notes

  • Use creamy peanut butter like Skippy or Jif for best smoothness; natural peanut butter requires thorough stirring.
  • You can melt butter and peanut butter on the stove instead of the microwave for making the fudge.
  • Store fudge in the refrigerator up to 2 weeks or freeze wrapped for up to 2 months.
  • Line the pan with parchment paper to easily lift out fudge slices after chilling.
