Ingredients

  • 1 ounce cheese tortellini bag
  • 1 cup pesto
  • 1 and 1/2 cups cherry tomato sliced in half
  • 1 ounce container mozzarella drained, marinated, balls
  • 1/4 cup red onion diced

Instructions

  1. Bring a large pot of salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Do not over cook! 
  2. Drain and rinse under cold water until cool. 
  3. Place tortellini in a large serving bowl. Add in pesto, tomatoes, cheese, and onion. Toss well to coat. 
  4. Serve at once, or cover and place in the fridge for up to 3 days.
