  • 1 fresh pineapple , peeled, cored, and cut into small chunks (about 4 cups)
  • ice
  • 6 fresh mint leaves , steam discarded, plus sprigs for garnish, optional
  • sugar , to taste
  • juice from 1 lime
  • 4 ounces (½ cups) 100% pineapple juice, adjust to your liking

  1. Combine the sugar, mint, and 4 pieces of pineapple chunks in a cocktail shaker. Muddle with a wooden spoon until the sugar is dissolved and the pineapple and mint are crushed.
