Description
Easy Poached Salmon uses skin-on salmon filets poached gently in a pan with a flavorful liquid made from lemon slices, shallots, assorted fresh tender herbs such as dill and parsley, white wine, and water. This cooking method uses moderate heat to cook the salmon through evenly without drying it out or producing a crust.
Poaching yields a soft texture and a mild, fresh flavor from the lemon and herbs that gently infuse the fish during cooking. The salmon is cooked skin-side down and remains moist and flaky. Adding salt and pepper seasons the fish simply, letting the poaching ingredients shine.

Ingredients
- 2 lemon one thinly sliced for poaching and the other quartered for squeezing on top, plural
- 1 shallot thinly sliced, small
- 3 to 4 prigs fresh herbs tender, including dill, parsley, cilantro, tarragon, etc
- ½ cup white wine
- ½ cup water
- 4 (6-ounce) salmon filets
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
Instructions
- Prepare the poaching liquid. In a large skillet add the sliced lemon, shallot, fresh herbs, wine, and water. Bring to a simmer over medium heat.
- Add the salmon. Place the salmon filets (skin side down) in the pan, season with salt and pepper, cover the pan, and poach for 5 to 7 minutes, depending on the thickness of the salmon.
- Garnish and serve. Garnish the poached salmon with fresh herbs and a squeeze of lemon. If you'd like, you can drizzle hollandaise sauce on top before serving as well!
