Easy Pork Apple Ragu

Easy Pork Apple Ragu is heavy on flavorful ingredients, but is surprisingly light. Pick your favorite pasta and apples, and give this Ground Pork and Beef Ragu recipe a try. A dish that's got all the good stuff, this one's a definite keeper!

Ingredients

  • 4 tablespoons olive oil divided, as needed
  • 1 pound ground pork and/or ground beef
  • 1 medium onion diced
  • ½ pound mushroom chopped
  • 1 large pepper any color, diced
  • 1 large apple diced
  • 2-4 tablespoons garlic minced
  • ¼ cup dry sherry or white wine or dry white vermouth
  • 3 tablespoons thyme more or less to taste, dried
  • 1 ½ cups chicken broth or vegetable broth
  • 2 tablespoons white wine vinegar
  • 1 pound pasta your favorite variety
  • Parmesan Cheese as deisired, grated or shredded
  • black pepper
  • salt

Instructions

  1. In a large skillet, over medium to medium-high heat, cook ground pork and/or ground beef until no longer pink. Break up the meat with a wooden spoon into small pieces.
  2. Add onions and continue to cook for between 3 and 4 minutes.
  3. Add mushrooms into your skillet and continue to cook for about another 6 or 7 minutes and the mushrooms are tender. Stir regularly.
  4. Add apples, peppers and garlic and continue to stir for another couple of minutes.
  5. Add your sherry, wine or vermouth and let it reduce to almost nothing while you are stirring.
  6. Add broth, vinegar and thyme and reduce heat to medium-low or low and simmer for 30 minutes, almost covered. Stir occasionally.
  7. Season with salt and pepper to taste. Prepare pasta according to package directions.
  8. Serve Ragu over top of pasta with Parmesan cheese. Enjoy!
