Easy Portobello Mushrooms Recipe

Cheese lovers will enjoy these baked portobello mushrooms. They’re stuffed with two kinds of cheese and then baked until tender.

Ingredients
- ¾ lb portobello mushrooms
- 1 teaspoon minced garlic
- 2 tablespoons olive oil
- ½ teaspoon dried thyme
- ½ tablespoon butter
- 1 tablespoon grated parmesan
- 3 tablespoons shredded mozzarella
- salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Wipe the mushrooms clean and remove the stems. Finely mince the garlic.
- Lightly oil a baking sheet and place the mushrooms on top in a single layer with the open side facing up.
- In a small bowl, mix together the olive oil, garlic, dried thyme, and salt and pepper to taste.
- Evenly drizzle the mixture over the inside of each mushroom. Top each mushroom with a thin slice of the butter. Bake the mushrooms for about 15 minutes or until tender. While the mushrooms are baking, mix together the grated parmesan and shredded mozzarella.
- After 15 min, top the mushrooms with the cheese mixture and return to the oven for 5 minutes or until the cheese is golden and bubbly. Remove from the oven and serve!
