Easy Portobello Mushrooms Recipe

Cheese lovers will enjoy these baked portobello mushrooms. They’re stuffed with two kinds of cheese and then baked until tender.

Ingredients

  • ¾ lb portobello mushrooms
  • 1 teaspoon garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon thyme dried
  • ½ tablespoon butter
  • 1 tablespoon Parmesan Cheese grated
  • 3 tablespoons mozzarella cheese shredded
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 400°F. Wipe the mushrooms clean and remove the stems. Finely mince the garlic.
  2. Lightly oil a baking sheet and place the mushrooms on top in a single layer with the open side facing up.
  3. In a small bowl, mix together the olive oil, garlic, dried thyme, and salt and pepper to taste.
  4. Evenly drizzle the mixture over the inside of each mushroom. Top each mushroom with a thin slice of the butter. Bake the mushrooms for about 15 minutes or until tender. While the mushrooms are baking, mix together the grated parmesan and shredded mozzarella.
  5. After 15 min, top the mushrooms with the cheese mixture and return to the oven for 5 minutes or until the cheese is golden and bubbly. Remove from the oven and serve!
