  • 2 tbsp butter unsalted
  • 1 tsp garlic minced
  • 1 yellow onion medium, chopped
  • 1 oz pumpkin puree canned
  • 1 tsp thyme leaves finely chopped
  • 1 tsp ginger grated
  • 1 tsp cumin ground
  • 1 tsp black pepper ground
  • salt to taste
  • 2 1/2 cups chicken broth low-sodium
  • 1/4 cup heavy cream
  • 2 tbsp pumpkin seeds toasted, to garnish

Instructions

  1. Heat a heavy bottom pot with butter, once the butter is melted add garlic and onions and cook until the onions turn translucent.
  2. Add in the pumpkin puree, thyme, ginger, cumin, pepper and salt. Cook for 5 minutes.
  3. Now add the chicken broth and cook for 5 minutes, stirring constantly.
  4. Finally add the heavy cream and remove the pot from the heat.
  5. Using an immersion blender puree the soup.
  6. Transfer the soup to a bowl and garnish with pumpkin seeds before serving.
