Easy Pumpkin Spice Snowball Cookies
Description
The recipe starts by whisking together flour, salt, cinnamon, nutmeg, ginger, and allspice. Separately, softened butter is beaten with powdered sugar and vanilla extract until fluffy. The dry ingredients are mixed in to form a dough, then shaped into tablespoon-sized balls and arranged on parchment-lined baking sheets.
Baking at 350°F for 8 to 9 minutes allows the cookies to set with slight browning edges while remaining tender inside. After cooling 5 minutes, each cookie is rolled twice in a coating of powdered sugar and ground cinnamon, creating a snowy, spiced surface.

Ingredients
- 1 cup butter softened, unsalted
- 1 cup powdered sugar
- 1 teaspoon vanilla extract pure
- 2 ¼ cups flour
- ½ teaspoon kosher salt
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon allspice
Coating
- 1 cup powdered sugar
- 2 tablespoons ground cinnamon
Instructions
- Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
- Using a large bowl, whisk together the flour, salt, ground cinnamon, nutmeg, ginger, and allspice.
- Using a hand mixer, beat the butter and powdered sugar and vanilla until combined and fluffy.
- Gradually mix in the dry ingredients until a dough forms.
- Using a tablespoon, scoop some dough into the palm of your hand and roll into a ball.
- Place onto the cookie sheet.
- Repeat until all the dough has been rolled into a ball.
- Bake in the oven for 8-9 minutes or until slightly brown.
- Remove from oven and allow to cool for 5 minutes.
- In a medium bowl, whisk together 1 C powdered sugar and 2 tbsp ground cinnamon.
- Working with one cookie at a time, roll the cookie into the powdered sugar.
- Place onto a wire rack.
- Repeat steps with remaining cookies.
- Once all cookies have been rolled in the sugar, repeat again for a nice coating of powdered sugar.
