Description
This recipe begins by gently sautéing minced garlic in vegetable oil until just golden to prevent burning and bitterness. Pinto beans, along with some of their canning liquid, are then added with ground cumin, cayenne pepper, and salt. The mixture simmers to meld flavors and warm the beans through. Once heated, the beans are mashed—using a potato masher, fork, or immersion blender—to create a creamy consistency that retains small chunks for texture.
The gentle mashing and use of bean liquid contribute to a creamy yet textured refried bean ideal for serving with Mexican meals, tacos, or as a dip. The cumin and cayenne add warmth and mild heat balanced with garlic's aromatic base.
If the beans appear too watery, they will thicken when cooled, or the cook can return them to heat to evaporate excess moisture. Seasonings should be adjusted to taste after cooking for best balance.
Ingredients
- 1 tablespoons vegetable oil
- 2 garlic minced, cloves
- 30 oz pinto beans canned and not drained (800g)
- 1 teaspoon cumin
- ½ teaspoon cayenne pepper chilli powder (optional, or more to taste
- ½ teaspoon salt
- 2 tablespoons lime juice
Instructions
- Heat the oil in a large pan over a med/low heat, then add the garlic and cook, stirring, for 2 minutes until it just starts to turn golden (careful, it will quickly burn).
- Stir in the beans (and the liquid from 1 of the cans), cumin, cayenne and salt and heat for 5 minutes, stirring occasionally.
- Mash the beans with a potato masher, fork or with an immersion blender, but don’t puree it completely - keep a bit of texture.
- If the refried beans are a bit soupy, they will thicken up as they cool, or you can simmer them again to evaporate some moisture.
Notes
- Do not drain the canned beans' liquid; it helps maintain a creamy texture.
- Take care not to burn the garlic by cooking it gently and watching it closely.
- If the beans are too runny, allow them to cool or simmer again to thicken.
- Taste and adjust seasonings after cooking to suit your preference.
