Description
To prepare Easy Roasted Radishes, radishes are halved or quartered size-wise for even roasting. Thinly sliced onions are combined with the radishes, then tossed with melted duck fat or extra virgin olive oil, fine salt, and freshly ground white pepper. The mixture is spread on a sheet pan for roasting at 425°F (220°C).
After about 35 to 40 minutes, stirring halfway ensures even cooking and browning. The radishes become tender and shriveled, indicating they are fully cooked. Once removed, fresh mozzarella cheese is spread over the hot vegetables and returned to the oven just until the cheese fully melts, adding a creamy layer on top.
This preparation offers a contrasting texture of roasted radishes softened from their usual peppery crunch, enhanced by mild, melted cheese. It suits serving immediately as a side dish or light snack.

Ingredients
- 2 cups radish greens and ends removed
- 1 cup fresh mozzarella
- ⅓ cup onion thinly sliced
- 2 tablespoons duck fat melted (or extra virgin olive oil)
- ¼ teaspoon salt fine
- 1 teaspoon ground white pepper freshly ground
Instructions
- Pre-heat oven to 220 °C (425 °F)
- Half or quarter 2 cups radishes according to size, making them even for uniform cooking.
- In a sheet pan, toss the cut radishes and 1/3 cup onions with 2 tablespoons duck fat (or olive oil), 1/4 teaspoon fine salt and 1 teaspoon freshly ground white pepper.
- Roast in the oven for about 35-40 minutes at 220 °C (425 °F). Midway through cooking, open the oven and stir the radishes .
- Remove from the oven when the radishes are shriveled and soft. Test with a fork, they should be tender all the way through.
- Spread 1 cup fresh mozzarella on top of the radishes and take it back into the oven until it's fully melted.
Notes
- Different meltable cheeses can replace mozzarella depending on preference.
