In this salmon piccata, fresh salmon pieces are seasoned and seared skin side up until cooked through, ensuring a tender texture. The pan sauce is made by briefly sautéing garlic, then adding white wine, butter, lemon juice with zest, and capers. This sauce brings together acidity and buttery richness with the sharpness of capers.

The baby spinach is then tossed into the sauce with remaining seasoning and steamed gently, allowing it to wilt and soak up the flavors without overcooking. Returning the salmon to the pan with spooned sauce adds moisture and enhances presentation. Fresh chopped parsley finishes the dish, adding a hint of herbal brightness.

Ingredients

  • 6 pieces salmon about 2″ wide/4 ounces each, fresh
  • 12 ounces baby spinach
  • lemon juice and zest of 1
  • ¼ cup white wine I used Pinot Grigio
  • ¼ cup butter
  • 3 cloves garlic minced
  • 2 tablespoons capers
  • 2 tablespoons olive oil
  • 1 tablespoon parsley chopped, fresh
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

  1. Season your salmon with half the salt and pepper. Heat a large skillet to medium high heat and add in the olive oil.
  2. Sear the salmon for a few minutes, skin side up. Flip the salmon over and cook until it's cooked through. Then remove and set it aside.
  3. Add in the garlic and sauté for about 20 seconds, then add in the wine.  Add the butter, lemon juice, zest and capers.
  4. Spoon out and reserve some of the sauce to use later. Add in the spinach and the remaining salt and pepper. Toss in the sauce, then cover and steam the spinach for 2 minutes or until tender.
  5. Add the salmon back in and spoon the reserve sauce over the tops. Garnish with the parsley and serve.
