  • 14 oz/400g tomato drain the tomatoes if you want a thicker salsa, chopped
  • 1 red onion finely chopped
  • Coriander to taste, fresh small handful or cilantro
  • 2 jalapeño peppers seeds removed (optional, fresh
  • 2 garlic sliced, cloves
  • 1 teaspoon oregano dried
  • ½ teaspoon cumin ground
  • pinch sugar optional
  • salt to taste
  • black pepper to taste
  • lemon juice to taste, or lime juice

Instructions

  1. Place all the ingredients in the bowl of a food processor and pulse until the ingredients have just been broken down. Take care not to blend too much as the salsa will lose all its texture.
  2. Transfer to a serving bowl and serve.
  3. This salsa will keep for up to 10 days in a sealed container in the fridge.
