For the Meats:

  • 0.55 lb. beef 250 g
  • 1.10 lb. lean pork 500 g
  • 0.55 lb. pork back fat or fat trimmings, 250 g

For the Condiments:

  • 3 teaspoon salt kosher, 18 g
  • teaspoon black pepper 3.0 g
  • 1 teaspoon red pepper flakes 0.32 g
  • 5 teaspoon paprika 10.0 g
  • 2 cloves garlic 7.0 g, fresh clove, peeled and mashed into a paste
  • ½ cup beer or red wine, 125 ml

Instructions

  1. Grind meat through a large plate (½”, 12 mm). Peeled and mashed garlic cloves into a paste. Mix meat, garlic, salt, beer, and ingredients until thoroughly combined.
  2. Refrigerate overnight or let it sit in the fridge for at least an hour or so to let the flavor develop.
  3. Stuff into natural hog casings, 32-36 mm, and form 6” (15 cm) links. Alternately, shape into patties.

  • To store: You can store the sausage in an airtight container or a ziplock bag in the refrigerator for up to 4-5 days. For longer storage, you can freeze the sausages in a ziplock bag for up to 3 months.
  • To reheat: You can either pan-fry it in a skillet with a little oil or bake it in the oven at 350°F (175°C) for 10-15 minutes or until heated. Alternatively, microwave the sausage on high for 30-60 seconds or until it is heated.
