Easy Sauteed Peppers and Onions
Description
Easy Sauteed Peppers and Onions offers a soft, caramelized texture from bell peppers and onions slowly cooked in olive oil with garlic and mixed Italian herbs. The method can be done by cooking all ingredients together or caramelizing onions first, then adding peppers. Red chili flakes add a mild spicy note. Cooking over medium heat and avoiding overcrowding helps achieve even caramelization.
The softened mix is versatile for serving alongside grilled meats, stirring into pasta or rice, or layering in sandwiches. Its balance of sweetness and mild spice complements many dishes.
Using a non-stick or well-oiled cast iron pan helps prevent burning. Cooking in batches prevents steaming and supports proper caramelization. Stir occasionally during cooking to develop flavor and color evenly.
Ingredients
- 3 bell pepper yellow, red, green, sliced, can use mix of colorful peppers
- 2 onion sliced thin
- 4 cloves garlic minced
- 2 tablespoon olive oil
- 2 teaspoon red chili flakes adjust as per spice tolerance levels
- ¾ tablespoon red wine vinegar
- salt to taste
- black pepper to taste
- 2 ½ tablespoon mixed Italian herbs can use fresh herbs too
Instructions
- First slice bell peppers into thin strips. Try to slice uniformly sized strips.
- In a non-stick pan heat olive oil. If using cast iron pan use little extra oil to keep them from burning.
- Once oil is hot add thin sliced peppers, onions, dried Italian seasoning, salt and pepper to taste.Cook’s Tip: I like to dump everything at once and cook until together. Onions and peppers caramelize at the same time. It takes approximately 20 to 25 minutes to cook everything until vegetables are softened and caramelized.Alternatively you can first caramelize sliced onions for 8 to 9 minutes and then add in peppers and cook to caramelize. It will take about 12 to 14 minutes for peppers to caramelize and soften.
- Begin to cook and on medium flame and saute it at regular intervals.Pro’s Tip: Do not over crowd the pan white you saute peppers. Leave room for space to help move around the sliced peppers white you saute them.
- Do in multiple batches if you have to saute the peppers.
- Once bell peppers begin to soften, add in minced garlic, red wine vinegar and continue to cook for couple of more minutes on low flame.
- Once vegetables are tender enough, turn off flame.
- Serve hot with fajitas, use it to stuff quesadillas, use it with toasted bread, with grilled chicken. You can use this dish with any meal of your choice.
