Ingredients

  • 1 cup paella rice (or Arborio rice)
  • 3 cups chicken stock
  • 1 onion
  • 3 garlic cloves
  • 1 cup cherry tomato
  • 2 tablespoon vegetable oil ( or olive oil)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 1 teaspoon paprika sweet
  • 1 teaspoon Turmeric ground
  • 2 cup mixed seafood mussels, calamari rings, scallops, frozen
  • 1 cup mussels ( in shells)
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Peel and chop the onion and garlic.
  2. In a large pan, heat up the oil on a low heat, add the onion with a pinch of salt and fry until golden.
  3. Add the garlic and tomatoes, and cook for a further 2-3 minutes until the tomatoes are mushy.
  4. In go the paprika, turmeric and rice, salt and pepper.
  5. Give them a good stir, add the stock, and place the lid on.
  6. Cook on a low to medium heat without stirring at all until most liquid is evaporated.
  7. Throw in the seafood, and place the lid back again.
  8. Cook for 7 minutes until the seafood is cooked through, and rice is cooked, and all the liquid is absorbed.
  9. Garnish with fresh parsley.
